Amazing vegan pumpkin protein porridge


This recipe has to be one of the most delightful, tasty and warming one's out there!

This is the kind of breakfast that makes everything feel right in the world. It makes your mornings feel brand new and exciting. And once you get a bowl of this down you, you will feel like you can accomplish anything!

Ingredients


  • 1 1/4 Cup Unsweetened vanilla almond milk

  • 1/2 Cup Old fashioned rolled oats (Gluten free if needed)

  • 1 tsp Pumpkin pie spice

  • Pinch of sea salt

  • 1 Cup Canned pumpkin puree or compote

  • 6 Tbsp Vanilla protein powder (pea, brown rice or hemp protein)

  • 2 tsp Maple syrup

  • 1 1/2 tsp Natural butter extract

  • Pecans, for garnish (optional)


Instructions


  1. Combine the almond milk, oats, pumpkin spice, puree and salt in a medium pot on high heat and bring to the boil. Boil one minute, stirring frequently.

  2. Reduce the heat to medium and simmer, gently keep stirring as this will help the bottom of the pan not to stick and burn. Do this until the mixture is thick but still creamy and the oats are soft, about 4-5 minutes.

  3. Remove from the heat and stir in all other ingredients.

  4. Top with pecans (if using) and DEVOUR immediately!
